The answer is None. We may call them butters, from the name they have in English (eg peanutbutter = peanut butter) and from the texture they have, but in reality, they are spreads of Nuts or Sesame. It is a frequent question that many have!!
They are made by grinding nuts or sesame. The more they grind, the more they begin to produce the oils they contain, resulting in a paste and then a more fluid spread. In the market there are spreads of nuts and tahini (from sesame) that have undergone more processing and have added oils, sugar, honey, salt and various flavorings. But there are also spreads that have only the ground fruit without added oils, sugar and salt, they have all the taste of the nut we chose and its nutrients!! The oils that come to the surface are the oils of the fruit and are a natural phenomenon, all it takes is a good stirring.
Do you want to make it yourself?? Easy!! You need a strong blender (the grinding lasts long enough and if it is weak it will… fumes, I’m talking from experience) or food processor and at least 500 grams of your favorite nut. You could add 1-2 teaspoons of honey, a little salt or cocoa. I personally grind only the fruit.
First, put the nuts you chose for 7-10 minutes in the oven at 180degrees so that they heat up a little and release their oils more easily while grinding them. Let them cool a little. Pour them into the bowl of the blender or food processor and grind them until they take the form of a spread. It takes a little patience!! You will see the bowl from the blender heating up a little, it is something natural that is made by grinding the fruits!! Finally put it in a jar and it’s ready!
The truth is when I discovered Peanut Butter, Almond Butter, Hazelnut Butter and Tahini from Cicamon, which makes them all in a stone mill and contains nothing else except the corresponding fruit, I stopped making my home. This saves time, I have a larger quantity and I do not destroy the blenders at home!! And of course you can mix them with honey or cocoa if you want them sweeter and chocolatey!!
